Winter Kitchen

In my grandmother’s house the oven was never off between October and April. It warmed the kitchen, dried the mittens and, as she said, kept the trolls out.

These are the recipes from that kitchen, and from mine: food for short days and long evenings, most of it cooked slowly, almost all of it better the next day. You will need a heavy pot, a good knife and a little patience.
